Method

1. Peel and quarter potatoes. Add salt and bring to boil, reduce heat and simmer, until potatoes are very tender. (roughly 20-25 minutes)

2. Drain potatoes, add Extra Virgin Olive Oil, pepper, chives and salt. Mash with fork and add extra oil where necessary
