Ingredients
- 4 Large potatoes
- Salt
- Black pepper
- 1/2 cup Cobram Estate Extra Virgin Olive Oil
- 1 tablespoon fresh chives
Method
- Peel and quarter potatoes. Add salt and bring to boil, reduce heat and simmer, until potatoes are very tender. (roughly 20-25 minutes)
- Drain potatoes, add Extra Virgin Olive Oil, pepper, chives and salt. Mash with fork and add extra oil where necessary
