Extra Virgin Olive Oil Mashed Potato

Ingredients

• 4 Large potatoes
• Salt
• Black pepper
• 1/2 cup Cobram Estate Extra Virgin Olive Oil
• 1 tablespoon fresh chives

Method

1. Peel and quarter potatoes. Add salt and bring to boil, reduce heat and simmer, until potatoes are very tender. (roughly 20-25 minutes)
2. Drain potatoes, add Extra Virgin Olive Oil, pepper, chives and salt. Mash with fork and add extra oil where necessary
