Method

Step 1

Combine soy sauce, sugar and 2 teaspoons of oil in a small bowl. Stir until sugar dissolves. Set aside.

Step 2

Heat 1 tablespoon of the extra virgin olive oil in a large deep-frying pan over high heat. Cook garlic and mince, breaking up with a wooden spoon, for 5 minutes or until browned. Add carrot and cook for 2 minutes or until almost tender.

Step 3

Add sugar snaps and 2 tablespoons water to the pan. Cook, stirring, for 2-3 minutes or until tender. Add rice and cook, stirring, for 1-2 minutes or until rice has heated through.

Step 4

Add soy sauce mixture and lime juice. Toss gently until rice is coated in soy sauce mixture. Add the remaining 2 teaspoons oil. Toss to combine. Divide among serving bowls. Serve with lime wedge and shallots, if desired.

500g chicken breast mince

1 carrot, peeled, finely chopped

200g sugar snap peas

450g packet 2 ½ minute microwave jasmine rice

1 tablespoon fresh lime juice
