Ingredients
- 1 medium brown onion
- 2 cloves garlic
- Cobram Estate Extra Virgin Olive Oil
- 1 pinch paprika
- 1 teaspoon cumin
- 500g quality minced beef
- beef stock
- taco shells
- iceberg lettuce
- grated cheese
- 2 tomatoes
Salsa
- 2 ripe tomatoes
- 1 spring onion
- 3 sprigs fresh coriander
- 1/2 a lime
- Cobram Estate Extra Virgin Olive Oil
Guacamole
- 2 ripe avocados
- 1/2 a lime
- Cobram Estate Extra Virgin Olive Oil
Method
- Peel and dice onion. Add Cobram Estate Extra Virgin Olive Oil and garlic
- Add paprika, cumin and cook for 1-2 minutes
- Add beef and stir until it has browned
- Pour in beef stock, cover and cook for 40 minutes or until reduced
- Salsa - roughly chop tomatoes, trim and finely slice spring onion, roughly chop coriander leaves. Combine with the lime juice and extra virgin olive oil
- Guacamole - mash and add lime juice and extra virgin olive oil and gently mix.
