Pancakes with Dark Chocolate and Salt Flakes

Method
1 - Place all pancake ingredients, except chocolate into a Thermomix bowl and blend for 30 seconds on speed 10. Allow batter to rest for 30 minutes if possible.
2 - Heat Cobram Estate extra virgin olive oil in a non stick fry pan. Make sure the pan is hot but not smoking.
3 - Dollop some batter into the centre of pan and spread with a spoon. Top with a few pieces of chocolate. Spread a little more batter just over the top of the chocolate. Cook until bubbling through centre and browning on edges. Flip. Repeat until all batter is used.
4 - Serve immediately drizzled with Cobram Estate extra virgin olive oil and syrup, with the grated zest and salt over top.
NOTE: If you do not have access to a Thermomix you can substitute with a Food Processor

65g cornflour
60g Cobram Estate extra virgin olive oil
2 tbsp sugar
1 tsp pink salt flakes
1 tsp (each) baking powder and soda
220 g plain flour
450 g cultured buttermilk
1 large egg
100g dark choc, 70% in pieces
To Serve:
Orange zest, finely grated
Pure maple syrup
Cobram Estate extra virgin olive oil
