Matt Sinclair's 5 Minute Fried Rice

Method
- Heat the Cobram Estate Extra Virgin Olive Oil in a large non-stick frying pan over a high heat
- Fry off the bacon for 1 minute
- Crack in both eggs and allow to partially cook and scramble slightly
- Add peas, spring onions, rice and mix through
- Fry off for approx. 3 mins and season with sugar and salt, stirring to ensure it doesn’t stick to the bottom of the pan
- Garnish with coriander and finely sliced spring onion

2 Tablespoons Cobram Extra Virgin Olive Oil
2 rashers streaky bacon, sliced
2 free range eggs
½ cup peas
2 spring onions, sliced
2 cups cooked rice
Pinch salt
Pinch of caster sugar
To Garnish:
Picked Coriander and sliced Spring Onion
