Method

Preheat oven to 200 degrees celsius.

Combine the balsamic vinegar, extra virgin olive oil, and oregano in a small bowl and whisk to combine.

In a large baking dish place the chicken, chopped capsicum, onion and tomatoes.

Pour ½ the dressing over the chicken and vegetables and season with salt and pepper. Toss to coat.

Place tray in the preheated oven and cook for 25 minutes. Drizzle remaining dressing over tray and bake for a further 10 minutes or until the chicken is cooked through.

Remove from oven and top with goats fetta and chopped parsley
