Marika Day's Chocolate-Chunk Cookies

Method
Preheat the oven to 190 degrees celsius.
Combine extra virgin olive oil, sugar, eggs, and vanilla. Whisk until combined.
Combine in a separate bowl the flour, salt, and baking soda. Whisk.
Combine wet ingredients with the dry ingredients and mix until just combined. Fold through the chocolate chunks.
Cover mixture and place in the fridge to cool for 30 minutes.
Cook for 9-12 minutes depending on if you prefer your cookies crunchy or softer.
Allow to cool before eating!

2 eggs
½ cup white sugar
½ cup brown sugar
2 ½ cups plain flour
¼ tsp salt
1 tsp baking soda
100g dark chocolate
