Method

Preheat oven to 180 degrees celsius.

Place the apple slices and berries in a pie dish or deep dish. Toss with corn flour and cinnamon to coat.

Add the remaining ingredients into a bowl and stir well until the extra virgin olive oil and maple syrup have coated mixed through.

Spread the topping over the fruit base. Cover the dish with aluminum foil and place into a preheated oven for 30 minutes. Remove foil from the dish and bake for a further 15-20 minutes or until golden and toasted on top.

Serve with Greek yogurt or vanilla ice cream.

5 small granny smith apples, peeled, cored and thinly sliced

250g blueberries

1 tbsp corn flour

1 tsp cinnamon

1 ½ cup rolled oats

½ cup almond meal

¼ cup ground flaxseeds

1/4 cup Cobram Estate Extra Virgin Olive Oil
