Lime Ice Cream

Cooking time


1 -  Place all ingredients except cream into Thermomix bowl and blend for 20 seconds on speed 6. Scrape down sides of bowl and repeat.

2 - Remove mixture from bowl and set aside.

3 - Without cleaning bowl, place cream into bowl and whip for 15-30 seconds, using the butterfly, on speed 4 or until holding soft peaks. 

4 - Remove butterfly and place milk mixture back into bowl, blend for 3 seconds on speed 6.

5 - Fold in any mixture that is not well incorporated using a silicone spatula.

6 - Place into moulds of choice and freeze for 4-6 hours until solid. 

NOTE: If you do not have access to a Thermomix you can substitute with a Food Processor

90g Cobram Estate Extra Virgin Olive Oil

Zest of 2 limes, finely grated 

Juice of 2 limes

1 tbsp vanilla bean paste 

600ml carton pure cream
