Lentil Hummus

Method
Cover lentils with 3 cups of water and add garlic. Bring to the boil. Turn down to a simmer and cook for 25 minutes or until tender.
To make the lentil hummus, add the drained lentils (reserving liquid), garlic, tahini, lemon, Extra Virgin Olive Oil and a good pinch of salt. Blend until very smooth and pale, if too thick add some reserved liquid and more Extra Virgin Olive Oil.

1 cup of whole green lentils
1 clove garlic
1 lemon, juiced & zested
2 tbsp tahini
⅓ cup Cobram Estate Classic Flavour Extra Virgin Olive Oil
Salt
Smoked paprika, to serve
Parsley, to garnish
