Method

1. Place the garlic and salt in a mortar and bruise with a pestle until a sticky paste forms.

2. Add two large handfuls of basil leaves, and grind until bruised.

3. Once the basil leaves are broken down, add the pinenuts, lemon juice, parmesan cheese and olive oil and grind until well combined.

Check seasoning and add more salt or lemon if necessary.

1 bunch basil, leaves picked

40g parmesan, finely grated

50g pine nuts

¼-½ lemon, juiced

100ml Cobram Estate Classic extra virgin olive oil
