Method

1. To make the spice mix, combine all ingredients in a small bowl. Set aside.

2. Heat 1 tablespoon of oil in an ovenproof frying pan over medium heat. Add sausage meat

and cook until coloured and golden. Add carrot, zucchini, onion and garlic. Cook, stirring, for

3-4 minutes or until softened. Add spice mix and cook, stirring, for 1-2 minutes, until

fragrant.

3. Add tomato, stirring well to combine and adding a little water if needed to loosen the

sauce. Bring to a simmer. Stir in the beans.

4. Using the back of a spoon, make 4 indentations in the tomato mixture. Gently crack 1 egg

into each. Cook for 6-8 minutes or until egg whites have set but yolks are still soft.

5. Drizzle with additional extra virgin olive oil and scatter with sea salt, chilli and parsley. Serve with the

bread to soak up all the sauce.

2 tablespoons Cobram Estate Extra Virgin Olive Oil, plus extra, to drizzle

3 good-quality sausages, meat squeezed out of the casings

1 carrot, grated

1 zucchini, grated

1 brown onion, grated

3 garlic cloves, grated

400g can crushed tomatoes

400g can cannellini beans, rinsed, drained

4 eggs

Sea salt, to taste

Chilli flakes, to taste

1/2 cup fresh continental parsley leaves, roughly chopped

Crusty bread, grilled

Spice mix

1 tablespoon smoked paprika

1/2 tablespoon ground cumin

1 tsp chilli flakes

Sea salt, to taste
