Method

1. Line a baking tray with baking paper. Combine maple syrup, mustard and soy sauce in a

large shallow bowl. Add salmon and turn to coat. Set aside to marinate, skin side down, for

15 minutes. Transfer salmon to the baking tray.

2. Heat a Weber BBQ to medium-high (approx. 220C). Cook salmon for 20-25 minutes or

until cooked to your liking. Set aside to rest for 5 minutes. Drizzle with extra virgin olive oiloil, season with salt

and serve with lemon wedges.

Note

This recipe can also be cooked in an oven preheated to 220C. Place marinated salmon on a

baking tray and cook on the highest shelf for 20-25 minutes or until cooked to your liking.
