Hayden Quinn's Chermoula BBQ Chicken Breast

1. Heat barbecue grill to high. Drizzle chicken with oil, then sprinkle all over with chermoula,

massaging chicken with your hands until fully coated in the spices.

2. Place chicken, skin side up onto the grill. Cook with lid down for 6-8 minutes. Flip over

and cook until skin is crisp and lightly charred and chicken is cooked through. Set aside for

10 minutes to rest. Serve with lime wedges.


* This recipe also works with chicken thigh fillets, or you could even use a whole chicken.

Just coat in the chermoula spice mix and roast.

* Chermoula is a North African spice blend comprising cumin, paprika, onion, turmeric,

cayenne, garlic, parsley, salt, pepper and coriander.

* To test if your chicken breast is cooked, use a meat thermometer. The internal temperature

of your chicken breast should reach 75C.
