Method

  1. Preheat oven to 180 degrees celcius
  2. Heat Cobram Estate Extra Virgin Olive Oil in a pan over medium heat. Add onion and garlic and saute for 3-4 minutes until softened.
  3. Add the cabbage and saute for about 5 minutes until softened.Then add the zucchini and saute for another minute.
  4. Finally, add in the spinach and parsley, salt and pepper, and stir until spinach wilts.
  5. Flatten the vegetable mixture and make 4 little holes for the eggs. Crack an egg into each of the holes.
  6. Transfer the pan to the oven and bake for 5-8 minutes until the eggs are cooked the way you like them.
  7. Serve with 1/4 sliced avocado.
