Green Shakshuka Eggs

Method
- Preheat oven to 180 degrees celcius
- Heat Cobram Estate Extra Virgin Olive Oil in a pan over medium heat. Add onion and garlic and saute for 3-4 minutes until softened.
- Add the cabbage and saute for about 5 minutes until softened.Then add the zucchini and saute for another minute.
- Finally, add in the spinach and parsley, salt and pepper, and stir until spinach wilts.
- Flatten the vegetable mixture and make 4 little holes for the eggs. Crack an egg into each of the holes.
- Transfer the pan to the oven and bake for 5-8 minutes until the eggs are cooked the way you like them.
- Serve with 1/4 sliced avocado.

1/2 brown onion, diced

1 clove garlic, finely chopped
1 zucchini, grated
2 cups spinach
1 cup cabbage, finely chopped
1/8 cup fresh parsley, chopped
4 large free-range eggs
sea salt and pepper, to taste
1/2 avocado, to serve
