Method

Preheat oven to 170 degrees celsius

Beat 4 fresh eggs with an electric whisk on a low speed in a bowl until light and fluffy

Slowly add in 1 cup of caster sugar and mix until well combined
Slowly add in half a cup of light Extra Virgin Olive Oil and mix until well combined
Squeeze 1 cup of fresh orange juice and add into bowl, mix until well combined
Slowly add in 1 & ½ cups of self raising flour and 1 teaspoon baking soda until well combined and smooth
Pour mixture into a baking tin that has been buttered and floured

Tap baking tin with mixture on surface to remove air bubbles
Bake in oven for approximately 35 minutes until golden
Let the cake cool
Once cooled, remove cake from baking dish and dust generously with icing sugar
Cut, serve and enjoy
