Method

1. Preheat oven to 160°C

2. Place the tomatoes in a baking dish with garlic, basil, salt and Cobram Estate Extra Virgin Olive Oil

3. Bake for 60-90 minutes, or until the tomatoes start to collapse slightly. 

4. Add fresh basil and serve as a side dish or with pasta

2 x 200g punnets cherry tomatoes 

6 sprigs of basil, plus extra for finishing

4 cloves of garlic, thinly sliced lengthways

Coarse salt 

1 cup Cobram Estate Extra Virgin Olive Oil
