Baked Cajun Chicken with Onion and Potatoes

Method

  1. Preheat the oven to 200°C.
  2. In a bowl mix half of the Cobram Estate Garlic Infused Extra Virgin Olive Oil with the Cajun spices. Toss the chicken pieces in this preparation.
  3. Heat a baking dish, preferably non-stick, then add the remaining Cobram Estate Garlic Infused Extra Virgin Olive Oil. Brown the chicken pieces on high heat for a few minutes. Add the potatoes, onion and rosemary, toss well and cook for 3-4 minutes. Season with salt and pepper.
  4. Place the baking dish in the preheated oven and bake for about 20 minutes or until the chicken and potatoes are cooked.
  5. Serve with a green salad.
