Anchoïade with Greens and Mozzarella

Method

Bring a medium pot of salted water to the boil. Add the beans and once it comes back to the boil remove and chill in iced water.

For the Anchoïade, crush the garlic with salt in a mortar and pestle until it becomes smooth. Add the anchovies and pound into garlic to form a thick paste. Drizzle in oil and stir at the same time to incorporate. Mix in the vinegar, pepper and a small pinch of salt if needed.

Pour sauce into a bowl and place in the center of a platter. Arrange torn mozzarella, beans and radish around Anchoïade.

Anchoïade

1 clove garlic

4 good quality anchovies

100ml Cobram Estate Robust Extra Virgin Olive Oil

Splash of red wine vinegar

Salt & pepper
